Leerdammer Recipes: Grill it, melt it, sprinkle it, love it!
Lime, Sage and
Garlic Potted Prawns
- Serves 4
- Preparation 10 minutes
- Cooking 20 minutes (plus 1 hour to chill)
Ingredients
- 50g Leerdammer Original Block, grated
- 100g prawns, uncooked
- 2 limes, juice and zest
- 300g Boursin Garlic and Herbs cheese
- 25g butter, melted
- 50g white bread, cut into cubes
- 2 tsp olive oil
- Deep fried sage leaves
- Rocket
- Lime, slices
Method
- 1. Place the prawns and lime juice in a small pan and cook over a low heat for a few minutes until the prawns are pink and cooked through. Leave to cool. Reserve the juice.
- 2. Combine cooled prawns with the Boursin, butter, 2 tsp of the reserved lime juice and the zest.
- 3. Spoon mixture into four ramekin dishes and chill for at least one hour.
- 4. When ready to serve, heat the olive oil in a pan and fry the cubes of bread until crisp and golden and then roll in the grated Leerdammer whilst still warm, to make the croutons.
- 5. Turn out the potted prawns and serve on individual plates garnished with the deep fried sage leaves, croutons, rocket and fresh lime slices.
