Pizza Hearts with rocket pesto & pine nuts

Serves 4


  • Packet of Pizza Base Mix
  • 40g Pine Nuts (set aside a few for garnishing)
  • 2-3 tbsp.  Olive Oil
  • Bag of pre-prepared rocket (or 2 large bunches)
  • 4 Large Tomatoes, sliced or 10 – 12 cherry tomatoes
  • 6 – 8 slices of Leerdammer® Original


  1. Pre-heat oven to 220*C, 425*F, Gas Mark 7
  2. Prepare the pizza base in line with manufacturer’s instructions (or of course, make your own if you prefer!)
  3. Gently fry the pine nuts over a low heat for a couple of minutes until they are golden brown.  Keep a close eye as you’re doing this as they will turn brown quickly!
  4. Wash the rocket, shake it dry and remove any coarse stems. Put a few pieces aside for decoration.
  5. Whizz the pine nuts in the blender with the rocket and a teaspoonful of oil and some salt and pepper until you have a smooth paste the consistency of ketchup
  6. Cover a baking sheet with greased baking paper.
  7. Roll out the pizza base mix  on the baking sheet and cut out 8 large hearts.  Smooth the pesto mix onto the pizza hearts, top with the tomatoes and a heart-shaped slices of Leerdammer® cheese.
  8. Bake in the oven for 12 – 15 minutes or until bubbling and golden brown on top.
  9. Garnish with remaining pine nuts and rocket leaves.
  10. Present a pizza heart to your loved one!
