Ingredients
For the base (28cm diameter)
- 250g flour
- 1 egg
- 1 egg yolk (set aside the white for the filling, below)
- 1/2tsp salt
- 100g butter (cut into small pieces)
- Butter for greasing the base of the flan dish
For the filling:
- Approx 1 kg of vegetables of different colours, such as asparagus, carrots and swedes, green and yellow courgettes, beetroot
- 125g Leerdammer® Original
- 3 eggs plus the egg white
- 200g cream
- Salt & Pepper for seasoning
- Fresh nutmeg, ground
