Spiral Vegetable Quiche – a rainbow of colour

For the base (28cm diameter)

  • 250g flour
  • 1 egg
  • 1 egg yolk (set aside the white for the filling, below)
  • 1/2tsp salt
  • 100g butter (cut into small pieces)
  • Butter for greasing the  base of the flan dish

For the filling:

  • Approx 1 kg of vegetables of different colours, such as asparagus, carrots and swedes, green and yellow courgettes, beetroot
  • 125g Leerdammer® Original
  • 3 eggs plus the egg white
  • 200g cream
  • Salt & Pepper for seasoning
  • Fresh nutmeg, ground
